accounting tools, like for banking? I just use a multiple-sheet OpenOffice spreadsheet

yes. many organizations use spreadsheets, but they don't scale and have backup/logging issues...

I'm of the opinion to keep packaging it under /opt, so ARTIQ is truly standalone/portable. And it'll match what you'll have to do on Windows anyway
