"Purely functional" is a rather elusive concept. You can keep pure and impure completely separated in any language. Haskell's "purity" is also largely a library decision of sticking all side effectful functions in a single place.

For OCaml? https://ocaml.org/learn/books.html OCaml From the Very Beginning is very good (and available as a PDF for a reasonable price). Real World OCaml is also good, but with one caveat: it uses an alternative runtime library that is incompatible with the standard one (it's called Core), and I would advise not to use it until you can really judge for yourself whether you want it or not.
